- Prepare 3 tsp of bbq spice.

- Score the fat of the pork belly. Only half cut into the fat. Cuts must be parallel with each other.

- Roll up the meat and tie with string.
- Rub the fat with a good amount of salt.
- Put in a gas rotisserie spit or oven with a rotisserie or a braai (BBQ) on high heat for 30 minutes.
- Turn heat down to medium for a further 60 minutes.
- Sprinkle a little more salt on meat and cook for a further 90 minutes.
